Ingredients:
4- six oz. boneless pork chops
2 Tablespoons vegetable oil
4 apples ( I use Gala or red delicious) sliced
2 Tablespoon butter
2 Tablespoons dark brown sugar
1/4 cup Calvados (apple brandy)
Dash of cayenne pepper
Salt and pepper to taste

Directions: 

  1. Drizzle about 2 tablespoons vegetable oil in a skillet and heat over medium
  2. Season the chops on both sides with salt and pepper
  3. Sear the chops for 3-4 minutes on each side
  4. Move to a plate and cover to keep them warm
  5. Add the butter to the skillet and heat
  6. Stir in the apples, brown sugar, cayenne pepper and salt and pepper to taste.
  7. Add the Calvados stirring to get any brown bits (fond) from the skillet
  8. Sautee the apples until tender (about 8 minutes)
  9. Return the chops to the skillet with the apples and heat.
