Ingredients:
4- six oz. boneless pork chops
2 Tablespoons vegetable oil
4 apples ( I use Gala or red delicious) sliced
2 Tablespoon butter
2 Tablespoons dark brown sugar
1/4 cup Calvados (apple brandy)
Dash of cayenne pepper
Salt and pepper to taste
Directions:
- Drizzle about 2 tablespoons vegetable oil in a skillet and heat over medium
- Season the chops on both sides with salt and pepper
- Sear the chops for 3-4 minutes on each side
- Move to a plate and cover to keep them warm
- Add the butter to the skillet and heat
- Stir in the apples, brown sugar, cayenne pepper and salt and pepper to taste.
- Add the Calvados stirring to get any brown bits (fond) from the skillet
- Sautee the apples until tender (about 8 minutes)
- Return the chops to the skillet with the apples and heat.
