Yeasted Waffles With Cider Syrup

These yeasted waffles are the perfect treat for a brisk winter morning. The cider adds to the flavor of the batter, and the cider syrup takes this dish a few notches above your average waffles!

Serves 4

Waffles

Ingredients >

  • 1 cup milk
  • 1/2 cup butter
  • 2 cups flour
  • 2 tablespoons fast active yeast
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1/2 cup Brick River Brewer’s Choice cider

Directions >

  1. In a medium saucepan, heat the milk and butter until the butter melts. Let the mixture cool for 5 minutes.
  2. In a large mixing bowl, combine the flour, yeast, and salt. Pour the milk mixture into the flour mixture. Stir until combined. Mix in the eggs, vanilla, and cider.
  3. Cover bowl with plastic wrap and allow to rise for 1 hour in a warm draft-free place; the batter should double in size.
  4. Pour 1/4 of the batter onto waffle iron for each waffle; cook according to your iron’s settings. Top with cooked cranberries and serve with warm cider syrup.

Cider Syrup

Ingredients >

  • 2 cups Brick River Brewer’s Choice cider
  • ¼ cup brown sugar

Directions >

  1. In a medium saucepan over low heat, reduce the cider until ⅔ of it has evaporated. It should start to look thicker.
  2. Add the sugar and stir until dissolved. Simmer for an additional 10 minutes.
  3. Serve warm atop the yeasted waffles. Can be made in advance and reheated. Syrup lasts for 2 weeks in the refrigerator.
