Barbecue Bacon Cheddar Meatball Sub with Fire-Steamed Onions
Ingredients
- 1 pound lean ground beef
- 1 teaspoon pepper
- 1 teaspoon kosher salt
- 2 teaspoons granulated garlic
- 1 cup cooked bacon crumbles
- 4 ounces cheddar cheese, cut into 16 cubes
- 1 large yellow onion, sliced
- 4 premade foil packets
- 4 hoagie rolls
- Barbecue sauce
Directions
- Combine the ground beef, pepper, salt, garlic, and bacon crumbles in a bowl. Mix well.
- Form the mixture into 16 meatballs, approximately 1 inch in diameter.
- Push a cheese cube into the center of each meatball and close the beef around it until the cheese is completely hidden.
- Divide meatballs and yellow onion slices evenly between 4 pre-made foil packets.
- Seal and close the packets.
- Place the foil packets into the coals of the campfire. Cook each of the packets for a total of 18 minutes, turning the packets frequently.
- Serve the meatballs topped with the cooked onions and your favorite barbecue sauce on hoagie rolls. Serves 4.
