These cookies have ground coffee and coffee liqueur to give them the perfect robust flavor. Walnuts add a nutty crunch and the white chocolate adds sweetness. Try these with a cold glass of milk or a fresh-brewed cup of coffee.

Espresso-Spiked White Chocolate Chip Walnut Cookies

Ground coffee adds texture to the dough; coffee liqueur adds flavor.

Ingredients:

1 cup soft butter
1 cup brown sugar
1 cup sugar
2 eggs
1 teaspoon coffee liqueur
3 cups flour
1 teaspoon baking powder
1 teaspoon ground coffee
2 cups white chocolate chips
1 1⁄2 cups chopped walnuts

Directions:

1. Preheat oven to 350 degrees.

2. Cream together the butter and sugars until light and fluffy. Add one egg at a time, and mix to combine. Mix in coffee liqueur.

3. Sift the baking powder into the flour, and slowly add into the wet batter. Stir in the ground coffee, white chocolate chips, and walnuts.

4. Drop dough by rounded tablespoonfuls onto ungreased cookie sheet.

5. Bake for 12 minutes until golden brown.
