Yeasted Waffles With Cider Syrup
These yeasted waffles are the perfect treat for a brisk winter morning. The cider adds to the flavor of the batter, and the cider syrup takes this dish a few notches above your average waffles!

Ingredients >
- 1 cup milk
- 1/2 cup butter
- 2 cups flour
- 2 tablespoons fast active yeast
- 1 teaspoon salt
- 2 eggs
- 1/2 teaspoon vanilla
- 1/2 cup Brick River Brewer’s Choice cider
Directions >
- In a medium saucepan, heat the milk and butter until the butter melts. Let the mixture cool for 5 minutes.
- In a large mixing bowl, combine the flour, yeast, and salt. Pour the milk mixture into the flour mixture. Stir until combined. Mix in the eggs, vanilla, and cider.
- Cover bowl with plastic wrap and allow to rise for 1 hour in a warm draft-free place; the batter should double in size.
- Pour 1/4 of the batter onto waffle iron for each waffle; cook according to your iron’s settings. Top with cooked cranberries and serve with warm cider syrup.
Cider Syrup
Ingredients >
- 2 cups Brick River Brewer’s Choice cider
- ¼ cup brown sugar
Directions >
- In a medium saucepan over low heat, reduce the cider until ⅔ of it has evaporated. It should start to look thicker.
- Add the sugar and stir until dissolved. Simmer for an additional 10 minutes.
- Serve warm atop the yeasted waffles. Can be made in advance and reheated. Syrup lasts for 2 weeks in the refrigerator.
