Baked Brie Appetizer with Balsamic Berries and Thyme
Ingredients
- 1/2 cup fresh blackberries
- 1/2 cup fresh blueberries
- 1/2 cup fresh raspberries
- 1/2 cup fresh strawberries, sliced
- 1 tablespoon brown sugar
- 1 tablespoon balsamic
- 1 tablespoon fresh thyme, roughly chopped (or use 1 teaspoon dried thyme)
- 2 8-ounce wheels of brie cheese
- 4 premade foil packets
Directions
- Mix all berries, brown sugar, balsamic vinegar, and thyme together, and pour equal amounts into 2 foil packets.
- Remove plastic wrapper from the brie, leaving the edible white, thin rind intact.
- Place each wheel of cheese into its own foil packet.
- Seal and fold packets.
- Place all four packets into the coals of the fire.
- Cook each packet for 2 minutes. Flip packets and cook an additional 2 minutes on the second side.
- To serve, spoon hot berry mixture over baked cheese wheels. Serves 6 to 8
